After a trip to the farm, what am I going to do with all this stuff? Of course it had to be a cake. A beetroot cake.
Beetroots is something I rarely buy. But I had to buy those from Grays Farm.
Because I had just read about the most curious cake, and I had to try it. It’s from my favourite vegetarian recipes blog: Green Kitchen Stories. These guys have imagination. And they dare to experiment. I like that. After all, I work in a lab. I experiment. There’s a lot of trial and error going on in my daily life. Mostly error but that’s another story!
The cake has honey instead of sugar, lots of beetroots (I’ve used about 5), little chocolate (50g plus some cocoa powder) and I’ve used coconut oil but I reckon the result would have been even better with sunflower oil.
This cake lasted one day. My oh my…It’s a purple cake, so tempting, how can you ignore it? I can’t. You don’t.
